Spring Beauty
Low plant with clusters of white flowers that are striped with pink. Flowers usually have 5 petals with 5 stamens and pink anthers, but this one had 6 petals. This plant grows from a underground tuber, which early American colonists and Native Americans used for food. The tubers have a sweet, chestnut-like flavor.

"Claytonia virginica", the Virginia springbeauty, eastern spring beauty, grass-flower or fairy spud, is an herbaceous perennial in the family Montiaceae. Its native range is eastern North America. Its scientific name honors Colonial Virginia botanist John Clayton.
