walnut metamorphisis The Walnut tree or Juglans is a plant genus of the family Juglandaceae, the seeds of which are known as walnuts.  Here in south Bulgaria they are plentiful and can be freely picked from the roadside trees. Fresh out of the husk they are white and milky and at their sweetest as can be seen here and they darken with time and exposure to light. Perhaps 99% of shop bought walnuts are "old" and dried and do not compare to the fresh taste of the white ones. ''Juglans regia'', the Persian walnut, English walnut, or especially in Great Britain, common walnut, is an Old World walnut tree species native to the region stretching from the Balkans eastward to the Himalayas and southwest China. The largest forests are in Kyrgyzstan, where trees occur in extensive, nearly pure walnut forests at 1,000–2,000 m altitude.
